Ingredients

  • 900 grams Potatoes
  • 2 medium Yellow onion
  • 3 tablespoons Butter
  • 125 grams Swedish anchovy fillets (or sprats)
  • 400 ml Heavy cream
  • 100 ml Milk
  • 3 tablespoons Breadcrumbs
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Peel the potatoes and cut them into thin matchstick-sized strips, approximately 5mm wide.

Step 3

Peel the onions and slice them thinly.

Step 4

In a large skillet, melt the butter over medium heat and sauté the onions until soft and translucent, about 5-7 minutes. Set aside.

Drain the anchovy fillets, reserving the brine. Chop the fillets into small pieces.

Step 6

Grease a medium-sized ovenproof dish with butter. Begin layering the casserole: Place a third of the potatoes at the bottom of the dish, followed by half the sautéed onions and half the chopped anchovies. Repeat the layering, finishing with a layer of potatoes.

Step 7

In a mixing bowl, combine the heavy cream, milk, reserved anchovy brine, salt, and black pepper. Pour the mixture evenly over the layered potatoes and onions.

Sprinkle the breadcrumbs over the top layer.
