Ingredients

  • 1 piece Pie crust (store-bought or homemade)
  • 2.5 cups Whole milk
  • 0.75 cups Granulated sugar
  • 0.25 cups Cornstarch
  • 0.25 teaspoons Salt
  • 4 large Egg yolks
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Vanilla extract
  • 3 medium Ripe bananas
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract (for whipped cream)
  • 0 as desired Optional: shaved chocolate or toasted coconut for garnish

Directions

Step 1

Pre-bake the pie crust according to package instructions or your homemade recipe. Let it cool completely.

Step 2

In a medium saucepan, whisk together granulated sugar, cornstarch, and salt. Gradually add the milk, whisking to combine.

Step 3

Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble gently. Reduce the heat to low and continue cooking for 2 more minutes.

Step 4

In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly to temper them. Slowly pour the egg yolk mixture back into the saucepan, whisking constantly.

Step 5

Return the saucepan to medium heat and cook for 2 more minutes, whisking constantly, until the custard thickens further. Remove from heat and stir in butter and vanilla extract. Transfer the custard to a bowl and cover it with plastic wrap pressed directly onto the surface to prevent a skin from forming. Let it cool to room temperature.

Step 6

Peel and slice the bananas into coins. Arrange a layer of banana slices at the bottom of the cooled pie crust. Pour half of the cooled custard over the bananas, then add another layer of banana slices and the rest of the custard. Smooth the top with a spatula. Cover and refrigerate for at least 4 hours or until set.

Step 7

Before serving, prepare the whipped cream. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract using an electric mixer until stiff peaks form.

Step 8

Spread or pipe the whipped cream over the chilled pie. Garnish with shaved chocolate or toasted coconut if desired.

Step 9

Slice and serve cold. Enjoy!
