  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced

  • 2 celery stalks, diced
  • 2 medium potatoes, peeled and cubed
  • 14.5 ounces canned diced tomatoes (with juice)
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 2 teaspoons dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

In a large Dutch oven or stockpot, heat the olive oil over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat and set the browned beef aside on a plate.

Step 3

In the same pot, add the diced onion and minced garlic. Sauté for 2 minutes, stirring occasionally, until fragrant and slightly softened.

Add the carrots, celery, and cubed potatoes to the pot. Cook for another 5 minutes, stirring occasionally, to allow the vegetables to begin softening.
