Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1 tbsp Salt
  • 1 cup Mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp Apple cider vinegar
  • 2 Celery stalks
  • 1 small Red onion
  • 2 tbsp Fresh parsley
  • 3 Hard-boiled eggs
  • 0.5 tsp Black pepper
  • 0.5 tsp Paprika

Directions

Step 1

Place the Yukon Gold potatoes in a large pot and cover with cold water. Add 1 tablespoon of salt to the water.

Step 2

Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until they are fork-tender.

While the potatoes cook, dice the celery and red onion, and chop the parsley. Peel and chop the hard-boiled eggs into small pieces. Set aside.
