Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 medium onion
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground cumin
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Wash the basmati rice thoroughly under cold water until the water runs clear to remove excess starch, and then set it aside to drain.

Step 2

Peel and thinly slice the onions into half-moons. Finely mince the garlic cloves.

Step 3

In a medium saucepan, heat 1 tablespoon of unsalted butter and 1 tablespoon of olive oil over medium heat.

Step 4

Add the sliced onions to the saucepan and cook, stirring frequently, for 10-12 minutes until the onions become golden brown and caramelized. Monitor closely to prevent burning.

Step 5

Once the onions are caramelized, add the minced garlic, ground cumin, salt, and black pepper. Cook for 1-2 minutes, stirring, until the garlic is fragrant.

Step 6

Add the washed and drained basmati rice to the saucepan. Stir well to coat the rice grains in the savory onion mixture.

Step 7

Pour in 2 cups of water and bring the mixture to a boil over high heat. Once it reaches a boil, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15 minutes.

Step 8

After 15 minutes, turn off the heat but keep the lid on the saucepan. Allow the rice to rest for another 5 minutes to fully absorb the steam.

Step 9

Fluff the rice gently with a fork, and stir in the remaining 1 tablespoon of unsalted butter for extra richness.

Step 10

Transfer the onion rice to a serving dish and garnish with fresh parsley if desired. Serve warm and enjoy!
