Ingredients

  • 1 whole Cooked turkey carcass
  • 12 cups Water
  • 3 medium Carrots, peeled and sliced
  • 3 Celery stalks, sliced
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 medium Potatoes, diced
  • 3 cups Cooked turkey meat, shredded
  • 2 leaves Bay leaves
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 cups Egg noodles (optional)

Directions

Step 1

Place the turkey carcass in a large stockpot and add the 12 cups of water. Bring to a boil over medium-high heat.

Step 2

Reduce the heat to low, cover, and simmer for 1 hour to extract the flavor from the carcass.

Step 3

Carefully remove the carcass from the pot and strain the broth into a clean bowl. Discard any solids and return the strained broth to the stockpot.

Step 4

To the broth, add the sliced carrots, celery, diced onion, minced garlic, and potatoes. Stir to combine.

Step 5

Add the shredded cooked turkey meat, bay leaves, dried thyme, dried parsley, salt, and black pepper. Bring the mixture to a gentle simmer.

Step 6

Cover and cook for 45 minutes, stirring occasionally, until the vegetables are tender.

Step 7

If using egg noodles, add them to the soup during the last 10 minutes of cooking. Ensure they are fully cooked before serving.

Step 8

Remove the bay leaves from the soup and discard.

Step 9

Taste the soup and adjust seasoning with additional salt or pepper, if needed.

Step 10

Serve hot with crusty bread or crackers for a hearty, old-fashioned meal.
