Ingredients

  • 4 cups fresh broccoli
  • 1 cup chopped onion
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 cup crushed butter crackers (such as Ritz)
  • 2 tablespoons melted butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 3-4 minutes until tender-crisp. Drain and set aside.

Step 3

In a large skillet over medium heat, melt 3 tablespoons of butter. Add the chopped onion and sauté until softened, about 5 minutes.

Step 4

Sprinkle the flour over the cooked onions and stir continuously for 1-2 minutes to toast the flour.

Step 5

Gradually whisk in the milk and continue cooking until the mixture thickens and begins to bubble, about 5 minutes.

Step 6

Reduce the heat to low and stir in the shredded sharp cheddar cheese until melted. Season with salt and black pepper to taste.

Step 7

In a large mixing bowl, combine the cooked broccoli, cooked rice, and cheese sauce. Stir until evenly coated.

Step 8

Spread the broccoli mixture evenly into the prepared baking dish.

Step 9

In a small bowl, mix the crushed butter crackers with 2 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

Step 11

Allow the casserole to cool for 5 minutes before serving. Enjoy!
