  • 4 large russet potatoes
  • 3 tablespoons unsalted butter

  • 0.5 teaspoons onion powder
  • 0.5 teaspoons dried thyme
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.75 cups panko breadcrumbs
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a small amount of butter or oil.

Step 2

Peel the russet potatoes and slice them thinly (about 1/8 inch thick) using a knife or mandoline. Set aside in a bowl of cold water to prevent browning.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the all-purpose flour to form a roux. Cook for 1 minute, whisking constantly.

Gradually pour in the milk, whisking continuously to avoid lumps. Continue to cook until the mixture thickens, about 3-4 minutes.
