Ingredients

  • 60 grams unsalted butter
  • 150 grams granulated sugar
  • 2 large eggs
  • 60 grams all-purpose flour
  • 250 milliliters whole milk
  • 2 lemons lemon zest
  • 80 milliliters lemon juice
  • 1 pinch salt
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a medium-sized baking dish or four small ramekins lightly with butter.

Step 2

In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.

Step 3

Separate the eggs. Add the egg yolks one at a time to the butter mixture, mixing well after each addition. Save the egg whites for a later step.

Step 4

Stir in the all-purpose flour, mixing until just combined.

Step 5

Gradually pour in the milk, whisking to form a smooth batter. Then, mix in the lemon zest and freshly squeezed lemon juice. Add a pinch of salt to enhance the flavors.

Step 6

In a separate clean bowl, whip the egg whites until stiff peaks form. Gently fold the beaten egg whites into the lemon batter, being careful not to deflate the mixture.

Step 7

Pour the batter into the prepared baking dish or ramekins. Place the dish into a larger roasting pan. Carefully pour hot water into the roasting pan to create a water bath, filling it halfway up the sides of the dish.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden and set. The pudding should have a spongy layer on top and a creamy lemon custard underneath.

Step 9

Remove the baking dish from the water bath and allow the pudding to cool for a few minutes.

Step 10

Dust the top with powdered sugar and serve warm or at room temperature. Optionally, pair it with a dollop of whipped cream or fresh berries for extra flair.
