Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 1 cup creamy peanut butter
  • 2 pieces large eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until the mixture is light and fluffy, about 2-3 minutes.

Step 3

Add the peanut butter to the creamed mixture and blend until fully combined.

Step 4

Beat in the eggs, one at a time, followed by the vanilla extract, until the mixture is smooth.

Step 5

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Step 7

Using a tablespoon or a cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Flatten each ball of dough slightly with the back of a fork to create the classic crisscross pattern.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden but the centers are still soft. Be careful not to overbake.

Step 10

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
