Ingredients

  • 3 cups Shredded cooked chicken
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 10 pieces Flour tortillas
  • 1 cup Chopped onion
  • 1 4-ounce can Canned diced green chilies
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Sour cream
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium mixing bowl, combine shredded cooked chicken, 1 cup of shredded cheddar cheese, 1/2 cup of shredded Monterey Jack cheese, chopped onion, and diced green chilies. Mix well and set aside.

Step 3

In a medium saucepan over medium heat, melt the butter. Stir in flour and cook for 1-2 minutes, creating a roux.

Step 4

Gradually whisk in the chicken broth and cook for 3-4 minutes, stirring constantly, until the mixture thickens.

Step 5

Stir in the sour cream, chili powder, garlic powder, cumin, salt, and black pepper. Cook for another 2 minutes, then remove from heat.

Step 6

Spread 1/4 cup of the sauce on the bottom of a greased 9x13-inch baking dish to prevent sticking.

Step 7

Spoon 1/4 to 1/3 cup of the chicken mixture into each tortilla. Roll tightly and place seam-side down in the baking dish.

Step 8

Pour the remaining sauce evenly over the rolled tortillas, ensuring all are covered.

Step 9

Sprinkle the remaining shredded cheddar cheese and Monterey Jack cheese over the top.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let cool for 5 minutes. Garnish with freshly chopped cilantro before serving.
