Ingredients

  • 3 cups All-purpose flour
  • 2 cups Granulated sugar
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 3 large Eggs
  • 1 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 20-ounce can Crushed pineapple (with juice)
  • 1.5 cups Mashed ripe bananas
  • 0.5 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round pans.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt.

Step 3

In another large bowl, beat the eggs lightly. Add the vegetable oil, vanilla extract, crushed pineapple with its juice, and mashed bananas. Mix until well combined.

Step 4

Gradually fold the wet ingredients into the dry ingredients, stirring just until everything is combined. Do not overmix.

Step 5

If using chopped walnuts or pecans, fold them gently into the batter.

Step 6

Pour the batter evenly into the prepared pan(s). Smooth out the top with a spatula.

Step 7

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cake from the oven and allow it to cool completely in the pan on a wire rack.

Step 9

Once cooled, you can serve immediately, store in the fridge for up to a week, or wrap tightly in plastic wrap and freeze for longer storage (OAMC friendly).
