Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups enchilada sauce
  • 8 medium flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until it is browned and crumbled, about 5-7 minutes. Drain any excess grease.

Step 3

Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic, ground cumin, chili powder, salt, and black pepper. Cook for an additional 1 minute, stirring constantly.

Step 4

Pour 1/2 cup of the enchilada sauce into the skillet with the beef mixture and stir to combine. Remove from heat.

Step 5

Spread 1/2 cup of the enchilada sauce in the bottom of a 9x13-inch baking dish to prevent sticking.

Step 6

Place a flour tortilla on a flat surface. Spoon about 1/4 cup of the beef mixture across the center of the tortilla. Sprinkle with a small amount of shredded cheddar cheese, then roll the tortilla tightly around the filling and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.

Step 7

Pour the remaining enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the remaining shredded cheddar cheese over the top.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Garnish with fresh cilantro, if desired, and serve hot. Enjoy your easy beef enchiladas!
