Ingredients

  • 300 grams pitted dates
  • 100 grams unsalted butter
  • 100 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 150 grams crushed graham crackers
  • 75 grams chopped walnuts or pecans
  • 100 grams shredded unsweetened coconut

Directions

Step 1

Chop the pitted dates into small pieces and set them aside.

Step 2

In a saucepan, melt the unsalted butter over medium heat.

Step 3

Add the granulated sugar and chopped dates to the saucepan, stirring constantly until the mixture becomes thick and the dates break down into a smooth paste. This should take about 3-4 minutes.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract.

Step 5

Add the crushed graham crackers and chopped walnuts (or pecans) to the date mixture. Stir until well combined and a sticky dough forms.

Step 6

Allow the mixture to cool slightly until it's comfortable to handle, about 5 minutes.

Step 7

Place the shredded coconut into a shallow dish or plate.

Step 8

Using clean hands, roll small portions of the date mixture into 1-inch balls, then roll each ball in the shredded coconut to coat evenly.

Step 9

Place the coated balls on a parchment-lined baking sheet or plate.

Step 10

Refrigerate the date balls for at least 1 hour to set before serving.

Step 11

Store the date balls in an airtight container in the refrigerator for up to 1 week.
