Ingredients

  • 4 pieces chicken breast, boneless and skinless
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 0.75 cups chicken broth
  • 0.25 cups dry white wine
  • 0.25 cups lemon juice, freshly squeezed
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound them with a meat mallet until they are approximately 1/2 inch thick.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.

Step 3

In a large skillet, heat 2 tablespoons of the butter and 2 tablespoons of olive oil over medium-high heat.

Step 4

Cook the chicken breasts in the skillet for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate, tenting with foil to keep warm.
