Ingredients

  • 4 pieces (6 oz each) Salmon fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups (diced) Fresh pineapple
  • 0.5 cup (diced) Red bell pepper
  • 0.25 cup (finely diced) Red onion
  • 2 tablespoons (chopped) Cilantro
  • 1 whole (juiced) Lime
  • 1 small (seeded and diced) Jalapeño (optional)

Directions

Step 1

Preheat the grill or stovetop grill pan to medium-high heat.

Step 2

In a small bowl, mix olive oil, garlic powder, paprika, ground cumin, salt, and black pepper to create a spice rub.

Step 3

Brush each salmon fillet with olive oil and evenly coat both sides with the spice rub.

Step 4

Place the salmon fillets on the preheated grill skin-side down. Cook for 5-6 minutes per side, or until the fish flakes easily with a fork. Remove from heat and let rest for a few minutes.

Step 5

While the salmon is cooking, prepare the pineapple salsa. In a medium bowl, combine diced pineapple, red bell pepper, red onion, cilantro, lime juice, and jalapeño (if using). Mix well to combine and set aside.

Step 6

Serve the grilled salmon fillets topped with a generous spoonful of pineapple salsa. Garnish with extra cilantro, if desired.
