  • 400 grams Dried spaghetti
  • 150 grams Higher-welfare pancetta or smoked streaky bacon (chopped)
  • 4 Large free-range eggs
  • 50 grams Grated Pecorino cheese
  • 50 grams Grated Parmesan cheese
  • 2 Garlic cloves
  • 1 small handful Fresh flat-leaf parsley (optional, finely chopped)
  • 1 tablespoon Olive oil
  • 1 to taste Sea salt
  • 1 to taste Freshly ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the dried spaghetti according to the package instructions, until al dente.

Step 2

While the pasta is cooking, place a large frying pan over medium heat and add the chopped pancetta or bacon. Cook for about 5-7 minutes, stirring occasionally, until it becomes golden and crisp.

Step 3

Peel and crush the garlic cloves, then add them to the frying pan with the pancetta. Stir them around for 1-2 minutes to infuse the oil with a nice garlic flavor. Remove the garlic from the pan once golden to avoid overpowering the dish.

Step 4

In a medium bowl, beat the eggs, then add the Pecorino and Parmesan cheeses. Season the mixture with freshly ground black pepper, and stir until combined to create a rich, cheesy mixture.
