Ingredients

  • 4 pieces large onions
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 teaspoons fresh thyme leaves
  • 2 pieces garlic cloves
  • 2 tablespoons balsamic vinegar
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 cup chicken or vegetable stock
  • 0.5 cup Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the onions, removing the outer skin, but keep them whole with the root intact to hold them together during baking.

Step 3

Cut a small cross into the top of each onion to allow the flavors to penetrate as they cook.

Step 4

In a large ovenproof skillet or baking dish, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.

Step 5

Place the onions in the skillet and sear them for about 2 minutes on each side until lightly golden.

Step 6

Add the minced garlic and thyme to the skillet, stirring gently so the garlic doesn’t burn.

Step 7

Drizzle the balsamic vinegar over the onions and sprinkle with salt and black pepper.

Step 8

Pour the chicken or vegetable stock into the skillet, ensuring the onions are about halfway submerged.

Step 9

Dot the top of each onion with a small piece of the remaining butter.

Step 10

Cover the skillet or baking dish tightly with aluminum foil and transfer to the preheated oven.

Step 11

Bake for 45 minutes, then remove the foil and bake for another 15 minutes to allow the onions to caramelize further.

Step 12

If desired, sprinkle the onions with grated Parmesan cheese during the last 10 minutes of baking for a golden, cheesy topping.

Step 13

Serve the onions hot, spooning the flavorful broth over them as a sauce. Enjoy as a side dish or a vegetarian centerpiece.
