  • 1000 grams Fresh strawberries
  • 750 grams Granulated sugar
  • 1 large Lemon

Directions

Step 1

Start by washing the strawberries thoroughly under cold running water. Remove the green hulls and slice the strawberries into halves or quarters, depending on their size.

Place the prepared strawberries into a large, heavy-bottomed saucepan.

Zest the lemon using a fine grater and set the zest aside. Then juice the lemon, straining out any seeds. Add the juice and zest to the saucepan with the strawberries.

Pour the granulated sugar over the strawberries and stir gently to combine. Let the mixture sit for 10 minutes to allow the strawberries to release some of their juices.

Place the saucepan on medium heat. Stir the mixture gently until the sugar has completely dissolved, which should take about 5 minutes.

Turn up the heat to high and bring the mixture to a rolling boil. Use a wooden spoon to skim off any foam that forms on the surface.

Let the jam boil for about 15–20 minutes, stirring occasionally. To test if it's ready, drop a small amount onto a chilled plate. Let it cool for a few seconds, then push it with your finger—if it wrinkles, the jam is ready. If not, continue cooking and test again after a few minutes.
