Start by washing the strawberries thoroughly under cold running water. Remove the green hulls and slice the strawberries into halves or quarters, depending on their size.
Place the prepared strawberries into a large, heavy-bottomed saucepan.
Zest the lemon using a fine grater and set the zest aside. Then juice the lemon, straining out any seeds. Add the juice and zest to the saucepan with the strawberries.
Pour the granulated sugar over the strawberries and stir gently to combine. Let the mixture sit for 10 minutes to allow the strawberries to release some of their juices.
Place the saucepan on medium heat. Stir the mixture gently until the sugar has completely dissolved, which should take about 5 minutes.
Turn up the heat to high and bring the mixture to a rolling boil. Use a wooden spoon to skim off any foam that forms on the surface.
Let the jam boil for about 15–20 minutes, stirring occasionally. To test if it's ready, drop a small amount onto a chilled plate. Let it cool for a few seconds, then push it with your finger—if it wrinkles, the jam is ready. If not, continue cooking and test again after a few minutes.
Once the jam has reached the desired consistency, remove it from the heat and allow it to cool slightly for 5 minutes.
Carefully ladle the warm jam into sterilized jars, filling them almost to the top. Seal the jars tightly with their lids while the jam is still warm.
Allow the jars to cool completely at room temperature. Store in a cool, dark place for up to six months. Once opened, refrigerate and use within 2 weeks. Enjoy!
