Pour the whole milk into a medium-sized saucepan and gently heat it over medium heat. Stir occasionally to prevent scorching.
Bring the milk to a low simmer and heat until it reaches about 85°C (185°F). If you don't have a thermometer, look for small bubbles forming around the edges of the pot, but avoid a rolling boil.
Remove the saucepan from the heat and let the milk cool down to about 43°C (110°F). This is the ideal temperature for introducing the live yogurt cultures. If you don't have a thermometer, it should feel warm but not hot to the touch.
In a small bowl, mix 2 tablespoons of live plain yogurt with a few tablespoons of the cooled milk to create a smooth mixture.
Gently whisk the yogurt mixture back into the saucepan with the rest of the milk until fully incorporated.
Pour the mixture into a clean, sealable container or jars. Cover them tightly with a lid or plastic wrap.
Place the container in a warm, draft-free area to ferment for 6 to 12 hours. This can be done by wrapping the container in a towel and placing it in an oven with the light on, or using a yogurt maker if you have one. The longer it ferments, the tangier the yogurt will become.
After the fermentation period, check the texture and taste of the yogurt. If it's set to your liking, transfer it to the fridge to chill for at least 2 hours before serving.
Enjoy your homemade yogurt as a healthy snack, breakfast addition, or ingredient in your favorite recipes!
