Ingredients

  • 400 grams dried spaghetti
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic cloves
  • 1 unit red chili
  • 250 grams cherry tomatoes
  • 10 leaves fresh basil leaves
  • 30 grams Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

While the pasta is cooking, peel and finely slice the garlic cloves. Deseed and finely slice the red chili.

Step 3

Heat the extra virgin olive oil in a large frying pan over medium heat. Add the sliced garlic and chili, cooking for 1-2 minutes until fragrant but not browned.

Step 4

Slice the cherry tomatoes in half and add them to the frying pan. Cook for 5-7 minutes until the tomatoes soften and create a light sauce.

Tear the fresh basil leaves into small pieces and stir them into the pan. Season with salt and black pepper to taste.

Add the drained spaghetti to the frying pan, tossing to combine with the sauce. If the pasta seems dry, add some of the reserved pasta water a little at a time until the desired consistency is achieved.
