Ingredients

  • 250 grams unsalted butter
  • 200 grams dark chocolate (70% cocoa solids)
  • 170 grams all-purpose flour
  • 50 grams cocoa powder
  • 270 grams golden caster sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 75 grams chopped nuts (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 20x30 cm (8x12 inch) rectangular baking tin. Line it with parchment paper for easy removal.

Step 2

Melt the butter and dark chocolate together in a heatproof bowl over a saucepan of simmering water, stirring until smooth. Remove from heat and set aside to cool slightly.

Step 3

In a medium bowl, sift together the flour and cocoa powder to combine. Set aside.

Step 4

In a large mixing bowl, whisk together the sugar, eggs, and vanilla extract until pale and fluffy. This will give the brownies a nice crackly top.

Step 5

Gradually fold the melted chocolate mixture into the egg mixture until well combined, using a spatula to avoid deflating the air you whisked in.

Step 6

Gently fold the sifted flour and cocoa mixture into the wet ingredients until just combined. Be careful not to overmix, as this will affect the texture of the brownies.

Step 7

If using, fold in the chopped nuts for added crunch and flavor.

Step 8

Pour the batter into the prepared baking tin, spreading it out evenly with a spatula.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is shiny and cracked but the center is still slightly gooey. Insert a toothpick into the middle—if it comes out with a few moist crumbs, the brownies are done.

Step 10

Remove the brownies from the oven and let them cool in the tin for 10 minutes before transferring them to a wire rack. Allow them to cool completely for easier slicing.

Step 11

Cut into squares or rectangles and serve. Store leftovers in an airtight container for up to 3 days.
