Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 15 oz can diced tomatoes with green chilies (Rotel)
  • 15 oz can tomato sauce
  • 15 oz can black beans, drained and rinsed
  • 15 oz can kidney beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup beef or chicken broth
  • 2 tbsp taco seasoning mix
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 cup shredded cheddar cheese (for serving)
  • 0.5 cup sour cream (for serving)
  • 2 tbsp sliced green onions (for garnish)
  • 2 cups tortilla chips (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes, until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef to the pot and cook until browned, breaking it apart with a spoon. Drain any excess grease if necessary.

Step 5

Stir in the taco seasoning mix, ground cumin, chili powder, salt, and pepper. Combine well with the cooked beef.

Step 6

Pour in the diced tomatoes with green chilies, tomato sauce, drained black beans, drained kidney beans, frozen corn, and beef or chicken broth. Stir everything together.

Step 7

Bring the mixture to a simmer over medium-high heat, then reduce the heat to low and cover the pot.

Step 8

Let the chili simmer for 30 minutes, stirring occasionally, to allow the flavors to meld.

Step 9

Taste and adjust seasoning as needed. If the chili is too thick, add a splash of broth or water to reach your desired consistency.

Step 10

Serve the chili hot in bowls. Top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of sliced green onions.

Step 11

Optional: Serve with tortilla chips on the side for scooping.
