Ingredients

  • 4 cloves garlic, minced
  • 1 14-ounce can canned diced tomatoes
  • 3 cups chicken broth
  • 1.5 cups long-grain white rice, uncooked
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions, sliced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat.

Step 2

Add the diced chicken thighs and cook until browned, about 5-7 minutes. Remove and set aside.

In the same skillet, add another tablespoon of olive oil and cook the sliced andouille sausage until browned. Remove and set aside.
