  • 1 teaspoon ground allspice
  • 1 tablespoon curry powder
  • 0.5 teaspoon ground black pepper
  • 1 pepper scotch bonnet pepper, finely chopped (optional for spice)
  • 0.5 cup breadcrumbs
  • 0.5 cup chicken stock or water
  • 1 large egg (for egg wash)
  • 1 tablespoon milk or water (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour, turmeric, and salt. Add the chilled unsalted butter and shortening, cutting them into the flour mixture with a pastry cutter or your fingers until the texture resembles coarse crumbs.

Gradually mix in cold water (about 1 tablespoon at a time) until the dough comes together. Knead lightly, form into a disc, cover with plastic wrap, and refrigerate for at least 20 minutes.

Beat the egg and mix with 1 tablespoon of milk or water to create an egg wash. Brush the egg wash over the top of each patty.
