Ingredients

  • 2 teaspoons Thyme (dried)
  • 2 teaspoons Allspice (ground)
  • 0.5 teaspoon Cinnamon (ground)
  • 0.5 teaspoon Nutmeg (ground)
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 tablespoon Brown sugar
  • 2 cups Pineapple (diced)
  • 1 piece Red bell pepper (diced)
  • 0.5 piece Red onion (diced)
  • 2 tablespoons Cilantro (chopped)
  • 1 piece Jalapeño (minced, optional)
  • 1 tablespoon Lime juice (for salsa)
  • 0.5 teaspoon Salt

Directions

Step 1

Place the scallions, garlic, ginger, scotch bonnet pepper, thyme, allspice, cinnamon, nutmeg, soy sauce, lime juice, olive oil, and brown sugar in a blender or food processor. Blend until smooth to create the jerk marinade.

Step 2

Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the jerk marinade over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 2 hours or preferably overnight.
