Ingredients

  • 4 cups Whole milk
  • 6 large Eggs
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 1 stick Cinnamon stick

Directions

Step 1

Preheat your oven to 350°F (175°C).

In a medium saucepan, heat the milk over medium heat. Add the cinnamon stick and let it simmer until the milk is infused with the cinnamon flavor, about 5–7 minutes. Remove from heat and let it cool slightly.

In a mixing bowl, whisk together the eggs, sugar, and vanilla extract until well combined and frothy.

Step 4

Slowly pour the warm (not hot) milk into the egg mixture in a thin stream, whisking constantly, to temper the eggs and avoid them from curdling. Discard the cinnamon stick.

Strain the mixture through a fine-mesh sieve to remove any lumps or egg solids.

Distribute the custard mixture evenly into 6 individual oven-safe ramekins.

Step 7

Place the ramekins in a large baking dish. Fill the baking dish with hot water until it reaches about halfway up the sides of the ramekins to create a bain-marie (water bath).

Carefully transfer the baking dish to the oven and bake for 45–55 minutes, or until the custards are set but still slightly jiggly in the center.

Once baked, remove the ramekins from the water bath and let them cool to room temperature. The tops should be lightly golden and caramelized.
