Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Sugar
  • 0.75 cup Milk
  • 1 large Egg
  • 2 tablespoons Unsalted butter (melted)
  • 2 medium Fresh jalapenos (finely diced, seeds removed for less heat)
  • 0.5 cup Cheddar cheese (shredded)
  • 2 stalks Green onions (thinly sliced)
  • 2 tablespoons Vegetable oil or additional butter (for cooking)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.

Step 2

In a separate bowl, mix the milk, egg, and melted butter until well combined.

Step 3

Pour the wet ingredients into the dry ingredients and gently stir until fully incorporated. Be careful not to overmix; a few small lumps are okay.

Step 4

Fold in the diced jalapenos, shredded cheddar cheese, and sliced green onions until evenly distributed throughout the batter.

Step 5

Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil or a small amount of butter.

Step 6

Scoop approximately 1/4 cup of batter onto the skillet for each pancake. Use the back of the scoop to gently spread the batter into a round shape.

Step 7

Cook the pancakes for about 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes or until golden brown on both sides.

Step 8

Transfer cooked pancakes to a plate and keep them warm. Repeat with the remaining batter, greasing the pan as needed between batches.

Step 9

Serve the Jalapeno Pancakes hot with sour cream, salsa, or your favorite savory toppings. Enjoy!
