Directions

Step 1

In a medium bowl, combine the shrimp, chopped jalapeño, lime juice, lime zest, minced garlic, 1 tablespoon of olive oil, 0.5 teaspoon of salt, and black pepper. Toss well to coat. Cover and refrigerate for 15 minutes while preparing the rice.
