Ingredients

  • 6 medium, fresh jalapeno peppers
  • 1 large red bell pepper
  • 1 medium white onion
  • 3 cloves garlic
  • 0.5 cup white vinegar
  • 1 cup granulated sugar
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon mustard seeds
  • 0.25 cup water
  • 1 tablespoon cornstarch

Directions

Step 1

Wash and dry the jalapeno peppers and red bell pepper. Remove the seeds and membranes for a milder chutney or leave some seeds for extra heat. Finely dice the peppers and set aside.

Step 2

Peel and finely dice the white onion. Mince the garlic cloves.

Step 3

In a medium saucepan, combine the white vinegar, granulated sugar, honey, and salt. Heat on medium, stirring occasionally, until the sugar dissolves completely.

Step 4

Add the diced jalapeno peppers, red bell pepper, onion, garlic, ground cumin, and mustard seeds to the saucepan. Stir well to coat the ingredients in the vinegar-sugar mixture.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to a simmer. Allow it to cook for 15 minutes, stirring occasionally, until the peppers and onions are soft and the flavors meld together.

Step 6

In a small bowl, whisk the water and cornstarch together to create a slurry. Gradually stir the slurry into the chutney mixture and cook for an additional 2-3 minutes to thicken.

Step 7

Remove the chutney from heat and let it cool to room temperature. The chutney will thicken further as it cools.

Step 8

Transfer the chutney to an airtight container or jar. Store in the refrigerator for up to two weeks.

Step 9

Serve as a dip, spread, or condiment with your favorite dishes.
