Ingredients

  • 2 cups canned pinto beans
  • 2 tablespoons olive oil
  • 1 medium jalapeno pepper
  • 2 large garlic cloves
  • 0.5 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
  • 0.5 teaspoons salt
  • 2 tablespoons fresh cilantro
  • 4 pieces lime wedges

Directions

Step 1

Rinse and drain the canned pinto beans under cold water and set them aside.

Step 2

Finely dice the jalapeno, removing seeds for less heat if desired, and mince the garlic cloves.

Step 3

In a medium skillet, heat the olive oil over medium heat.

Step 4

Add the diced jalapeno and minced garlic to the skillet. Sauté for 1-2 minutes until fragrant but not browned.

Step 5

Stir in the pinto beans, vegetable broth, ground cumin, and chili powder. Mix until evenly combined.

Step 6

Reduce the heat to low and use a potato masher or the back of a spoon to mash the beans to your desired consistency. Add more vegetable broth if the mixture looks too thick.

Step 7

Cook the beans for an additional 5-7 minutes, stirring occasionally, until heated through and creamy.

Step 8

Remove the skillet from heat and stir in the lime juice, salt, and chopped fresh cilantro.

Step 9

Serve warm, garnished with lime wedges on the side for an extra zing of flavor.
