Ingredients

  • 1 cup All-purpose flour
  • 1 cup Yellow cornmeal
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Buttermilk
  • 4 tablespoons Unsalted butter, melted
  • 1 Large egg
  • 6 slices Cooked bacon, finely chopped
  • 2 Jalapenos, finely diced
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners, or grease the tin with nonstick cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined.

Step 3

In a medium mixing bowl, whisk together the buttermilk, melted butter, and egg until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix.

Step 5

Fold in the chopped bacon, diced jalapenos, and shredded cheddar cheese until evenly distributed throughout the batter.

Step 6

Using a spoon or a cookie scoop, divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 16-18 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely or serve warm.
