Ingredients

  • 6 large russet potatoes
  • 2 cups heavy cream
  • 2 cups shredded cheddar cheese
  • 0.5 cups grated Parmesan cheese
  • 3 tablespoons unsalted butter
  • 2 minced garlic cloves
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon fresh thyme leaves
  • 0.5 cups breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the potatoes and slice them into 1/4-inch thick rounds. Set them aside in a large bowl of cold water to prevent browning.

Step 3

In a saucepan over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about 1 minute.

Step 4

Stir in the heavy cream, salt, black pepper, and thyme. Heat the mixture until it’s warm but not boiling, then remove it from the heat.

Step 5

Grease a 9x13-inch baking dish with olive oil. Drain and pat the potato slices dry.

Step 6

Arrange one-third of the potato slices in an even layer in the baking dish. Pour one-third of the cream mixture over the potatoes, then sprinkle with one-third of the cheddar and Parmesan cheeses.

Step 7

Repeat the layering process two more times until all the ingredients are used, finishing with the remaining cheeses on top.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

While the dish bakes, combine the breadcrumbs and olive oil in a small bowl. Mix well until the breadcrumbs are evenly coated.

Step 10

After 40 minutes, remove the foil from the baking dish and sprinkle the breadcrumb mixture over the top.

Step 11

Return the dish to the oven and bake uncovered for an additional 20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

Step 12

Let the potato bake cool for 5-10 minutes before serving. Garnish with extra thyme leaves if desired and enjoy!
