Ingredients

  • 3 cups Shredded cooked chicken (rotisserie or boiled)
  • 10 pieces Flour tortillas (8-inch size)
  • 2 cups Shredded Mexican blend cheese
  • 1 can Diced green chilies (canned)
  • 8 oz Cream cheese, softened
  • 1 cup Heavy cream
  • 1.5 cups Red enchilada sauce
  • 0.25 cup Chopped fresh cilantro
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 2 pieces Green onions, finely chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil.

Step 2

In a large mixing bowl, combine the shredded chicken, softened cream cheese, diced green chilies, 1 cup of shredded Mexican cheese, salt, black pepper, ground cumin, and garlic powder. Mix thoroughly until evenly combined.
