Ingredients

  • 2 cups Bran cereal
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 4 ounces Cream cheese (softened)
  • 0.25 cup Unsalted butter (softened)
  • 0.5 cup Honey
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Lemon zest
  • 2 tablespoons Fresh lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a medium bowl, combine the bran cereal and buttermilk. Let the mixture sit for about 10 minutes to allow the cereal to soften.

Step 3

In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.

Step 4

In a large mixing bowl, use an electric mixer to beat the softened cream cheese and butter together until smooth and creamy.

Step 5

Add the honey to the cream cheese mixture and mix until fully incorporated.

Step 6

Beat in the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract, lemon zest, and lemon juice, and mix until smooth.

Step 7

Gently fold the softened bran cereal mixture into the wet ingredients until well combined.

Step 8

Gradually add the dry ingredients to the wet ingredients, mixing just until no dry streaks remain. Be careful not to overmix the batter.

Step 9

Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.

Step 10

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 11

Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
