Ingredients

  • 500 g All-purpose flour
  • 100 g Granulated sugar
  • 10 g Instant yeast
  • 250 ml Whole milk
  • 80 g Unsalted butter
  • 2 large Eggs
  • 1 tsp Salt
  • 300 g Fresh blueberries
  • 50 g Powdered sugar
  • 1 tsp Vanilla extract
  • 1 tsp Lemon zest
  • 1 Egg yolk
  • 1 tbsp Water

Directions

Step 1

In a small saucepan, heat the milk until warm to the touch (about 110°F/43°C). Remove from heat.

Step 2

In a large mixing bowl, combine the warm milk, yeast, and a tablespoon of sugar. Let it sit for about 5 minutes until frothy.

Step 3

Add the remaining sugar, eggs, melted butter, and vanilla extract to the yeast mixture and whisk until combined.

Step 4

In a separate bowl, mix the flour and salt. Gradually incorporate the dry ingredients into the wet mixture, stirring until a dough forms.

Step 5

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Step 6

Place the dough in a lightly greased bowl, cover it, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 7

Meanwhile, in a small bowl, combine the blueberries, powdered sugar, and lemon zest. Set aside.

Step 8

Once the dough has risen, punch it down and divide it into 12 equal pieces.

Step 9

Flatten each piece into a disk and place a spoonful of the blueberry mixture in the center. Carefully fold the edges over the filling and seal to form a bun.

Step 10

Place the buns seam side down on a baking tray lined with parchment paper. Cover and let them rise for another 20 minutes.

Step 11

Preheat the oven to 375°F (190°C).

Step 12

In a small bowl, mix the egg yolk with water and brush the tops of the buns with this mixture.

Step 13

Bake the jagodzianki for 18-20 minutes or until golden brown.

Step 14

Allow them to cool on a wire rack before serving. Enjoy your freshly baked jagodzianka!
