Ingredients

  • 1 packet Orange jelly
  • 150 ml Boiling water
  • 1 large Egg
  • 25 g Caster sugar
  • 25 g Self-raising flour
  • 100 g Dark chocolate

Directions

Step 1

Prepare the orange jelly by dissolving the jelly packet in 150ml of boiling water. Stir well until completely dissolved.

Step 2

Pour the jelly into a shallow, flat-bottomed dish (approximately 20 cm in diameter) to create a thin layer. Refrigerate for about 1-2 hours or until set.

Step 3

Preheat the oven to 180°C (160°C fan) or 350°F. Lightly grease a 12-hole non-stick muffin tin.

Step 4

In a mixing bowl, whisk the egg and caster sugar together until thick, pale, and creamy, about 5 minutes.

Step 5

Sift the self-raising flour into the egg mixture, then gently fold it in using a spatula or metal spoon, taking care not to deflate the mixture.

Step 6

Spoon a heaped tablespoon of the batter into each hole of the muffin tin, spreading it out slightly to form a thin layer.

Step 7

Bake in the preheated oven for 8-10 minutes, or until the sponge is lightly golden and springs back when touched. Remove and let the sponges cool in the tin for 5 minutes before transferring to a wire rack.

Step 8

Once the jelly is set, use a small round cutter (approximately 4-5 cm in diameter) to cut out discs of jelly.

Step 9

Place a jelly disc on top of each sponge base.

Step 10

Melt the dark chocolate in a heatproof bowl set over a pan of simmering water, ensuring the bottom of the bowl does not touch the water. Stir until smooth.

Step 11

Spoon the melted chocolate over each Jaffa Cake, spreading it to cover the jelly. Use the back of a spoon or a fork to create a textured pattern as the chocolate begins to set.

Step 12

Let the chocolate cool and set completely before serving. Enjoy your homemade Jaffa Cakes!
