Ingredients

  • 2 medium Carrots
  • 2 medium Celery stalks
  • 1 large Leek (white and light green parts)
  • 1 medium Turnip
  • 1 medium Onion
  • 2 whole Garlic cloves
  • 6 pieces Parsley stems
  • 4 pieces Thyme sprigs
  • 1 piece Bay leaf
  • 8 pieces Black peppercorns
  • 10 cups Cold water
  • 0.5 teaspoons Salt

Directions

Step 1

Thoroughly wash and peel the carrots, turnip, and onion. Rinse the celery and leek under cold water to remove any hidden grit.

Step 2

Cut all the vegetables into medium chunks to ensure even cooking.

Step 3

In a large stockpot, combine the carrots, celery, leek, turnip, onion, garlic cloves, parsley stems, thyme, bay leaf, and black peppercorns.

Step 4

Add 10 cups of cold water to the pot, ensuring the vegetables are fully submerged.

Step 5

Bring the water to a boil over high heat. Once boiling, reduce the heat to low, and gently simmer the stock uncovered for 60 minutes. Skim off any foam or impurities that rise to the surface.

Step 6

After simmering, season the stock with salt and stir gently.

Step 7

Remove the pot from heat and let the stock cool slightly for about 5 minutes.

Step 8

Strain the stock through a fine-mesh sieve or cheesecloth into a large bowl, discarding the solids.

Step 9

Allow the stock to cool completely before storing. It can be kept in the refrigerator for up to 5 days or frozen for longer storage.

Step 10

Use this clear vegetable stock as a base for soups, risottos, or as a flavorful cooking liquid.
