Ingredients

  • 1 head Cauliflower
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 0.25 teaspoons Ground nutmeg
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 1.5 cups Gruyère cheese, shredded
  • 0.5 cups Parmesan cheese, grated
  • 0.5 cups Breadcrumbs
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cut the cauliflower into florets and blanch them in the boiling water for 5 minutes. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Step 4

Gradually pour the milk into the roux, whisking constantly, until the mixture thickens and becomes smooth. This should take about 3-5 minutes.

Step 5

Stir in the ground nutmeg, salt, and black pepper. Remove the saucepan from the heat and mix in 1 cup of the Gruyère cheese and 1/4 cup of the Parmesan cheese until melted and combined.

Step 6

In a lightly greased 9x13-inch baking dish, arrange the blanched cauliflower florets in an even layer.

Step 7

Pour the cheese sauce evenly over the cauliflower, ensuring all florets are coated.

Step 8

In a small mixing bowl, combine the breadcrumbs, remaining Gruyère cheese, remaining Parmesan cheese, and olive oil. Sprinkle this mixture evenly over the cauliflower.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

Step 10

Allow to cool for 5 minutes before serving. Enjoy your Jacques S Cauliflower Au Gratin alongside your favorite main dish or as a hearty side!
