Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a wooden spoon. Drain any excess grease.
Add the diced onion to the skillet with the ground beef and cook until softened, about 3-4 minutes. Stir in the minced garlic, salt, black pepper, and Italian seasoning, and cook for another 1-2 minutes until fragrant.
Pour in the tomato sauce and diced tomatoes with their juices. Stir to combine and let the mixture simmer for 10 minutes. Remove from heat.
While the meat sauce is simmering, cook the egg noodles in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
In a medium mixing bowl, combine the sour cream and softened cream cheese. Mix until smooth and well combined.
Spread half of the cooked noodles in the bottom of the prepared baking dish. Top with half of the sour cream mixture, followed by half of the meat sauce. Repeat the layers with the remaining noodles, sour cream mixture, and meat sauce.
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Remove the casserole from the oven and let it rest for 5-10 minutes before serving. Garnish with chopped fresh parsley, if desired.
