Slice the beef sirloin into thin strips, about 2 inches long. Season with 1/2 tsp salt and 1/2 tsp black pepper.
Dust the beef slices lightly with all-purpose flour, shaking off any excess.
Heat 1 tbsp of butter and 1 tbsp of olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides. Do not overcrowd the pan. Remove the beef and set aside.
