Ingredients

  • 8 oz dried rice noodles
  • 12 large shrimp (peeled and deveined)
  • 2 tbsp vegetable oil
  • 2 large eggs
  • 3 cloves garlic (minced)
  • 1.5 cups bean sprouts
  • 4 stalks green onions (sliced into 1-inch pieces)
  • 1 cup roasted peanuts (chopped)
  • 0.25 cup fresh cilantro (chopped)
  • 1 whole lime (cut into wedges)
  • 3 tbsp fish sauce
  • 1 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 0.5 tsp red chili flakes (optional)

Directions

Step 1

Soak the rice noodles in warm water for 20-30 minutes or until softened. Drain and set aside.

Step 2

In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, soy sauce, and red chili flakes (if using). Set the sauce aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and cooked through. Remove the shrimp and set aside.

Step 4

Add the remaining 1 tablespoon of oil to the wok. Crack the eggs into the pan and scramble them until just set. Push the eggs to one side of the pan.

Step 5

Add the minced garlic to the empty side of the pan and sauté for 30 seconds until fragrant.

Step 6

Add the softened rice noodles to the pan and pour the prepared sauce over them. Toss thoroughly to coat the noodles in the sauce.

Step 7

Toss in the cooked shrimp, bean sprouts, and green onions. Stir-fry for an additional 2-3 minutes until everything is heated through.

Step 8

Transfer the Pad Thai to serving plates and garnish with chopped peanuts, fresh cilantro, and lime wedges. Serve immediately.
