Ingredients

  • 2 cups Elbow macaroni
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard

  • 2 stalks Celery
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 2 large Hard-boiled eggs
  • 2 tablespoons Fresh parsley

Directions

Step 1

Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse under cold water to cool completely. Set aside.

Step 2

While the macaroni cooks, prepare the vegetables. Finely chop the celery, red bell pepper, and red onion. Set aside.

In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Whisk until smooth and well combined.
