Ingredients

  • 1.5 cups white rice
  • 3 cups water
  • 0.5 teaspoons salt
  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 0.75 cup sour cream
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots mix, thawed
  • 0.5 teaspoons paprika
  • 0.25 teaspoons black pepper
  • 0.5 cups breadcrumbs
  • 0.25 cups parmesan cheese, grated
  • 1 as needed cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch casserole dish with cooking spray.

Step 2

In a medium pot, combine the white rice, water, and salt. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed. Set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.

Transfer the mixture into the prepared casserole dish and spread it out evenly.

In a small bowl, combine the breadcrumbs and grated parmesan cheese. Sprinkle this mixture evenly over the top of the casserole.

Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the breadcrumb topping is golden brown.
