Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 pound mild Italian sausage (casings removed)
  • 1 large yellow onion, finely chopped
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 pound crusty French or Italian bread, cut into 1-inch cubes
  • 2.5 cups low-sodium chicken or turkey broth
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 as needed cooking spray or extra butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.

Step 2

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted. Add the sausage and cook, breaking it into small pieces with a spatula, until browned and cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the onion and celery. Cook, stirring occasionally, until the onions are translucent and the celery is softened, about 5 minutes. Add the garlic and cook for an additional minute, until fragrant.

Step 4

In a large mixing bowl, combine the cooked sausage, onion mixture, and bread cubes. Toss gently to distribute the ingredients evenly.

Step 5

Pour 2 cups of the chicken or turkey broth over the bread mixture and gently toss until the bread begins to soak up the liquid. Let it sit for 5 minutes. If the mixture seems dry, add the remaining 0.5 cup of broth in small increments, ensuring the bread is moist but not soggy.

Step 6

Add the parsley, sage, thyme, salt, and black pepper to the mixture. Toss again to incorporate the herbs and seasoning evenly.

Step 7

Add the beaten eggs to the mixture and fold gently until everything is well combined.

Step 8

Transfer the stuffing mixture into the prepared baking dish, spreading it out evenly. Cover the dish tightly with foil and bake for 30 minutes.

Step 9

Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and slightly crisp.

Step 10

Let the stuffing rest for 5 minutes before serving. Garnish with additional chopped parsley, if desired. Serve warm and enjoy!
