Ingredients

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 28 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.5 cup cheddar cheese, shredded (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)
  • 2 stalks green onions, sliced (optional, for topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil to the pot and allow it to warm for 30 seconds.

Step 2

Add the ground beef to the pot and cook until browned, about 7-8 minutes. Break up the meat with a wooden spoon as it cooks. Once cooked, drain excess fat if needed and set the beef aside on a plate.

Step 3

In the same pot, add the diced onion and green bell pepper. Cook for 5 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic to the pot and sauté for 1 minute, until fragrant.

Step 5

Return the ground beef to the pot. Stir in the chili powder, ground cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices.

Step 6

Add the canned diced tomatoes, tomato paste, kidney beans, black beans, and beef broth to the pot. Stir well to combine.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot with a lid and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste the chili and adjust seasoning as needed. Add more salt, pepper, or cayenne for extra heat, if desired.

Step 9

Serve hot in bowls, topped with shredded cheddar cheese, a dollop of sour cream, and sliced green onions, if desired. Enjoy!
