  • 4 cloves garlic, minced
  • 4 cups green cabbage, shredded
  • 1 14-ounce can canned diced tomatoes
  • 6 cups vegetable broth
  • 1 15-ounce can canned cannellini beans, rinsed and drained
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onions, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened.

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
