Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 pound ground beef
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 0.5 teaspoon cayenne pepper
  • 15 ounces diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon hot sauce (optional)
  • 0.5 cup cheddar cheese, shredded (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)
  • 2 tablespoons green onions, sliced (optional, for topping)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook until soft and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 7-10 minutes.

Step 5

Mix in the smoked paprika, ground cumin, chili powder, and cayenne pepper. Stir well to coat the beef evenly in spices.

Step 6

Add the diced tomatoes, tomato paste, and beef broth, stirring to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.

Step 8

Stir in the kidney beans and black beans. Cook for an additional 15 minutes, allowing the flavors to meld together.

Step 9

Season with salt and black pepper to taste. Add hot sauce, if using, for extra heat.

Step 10

Serve hot, topped with optional cheddar cheese, sour cream, and green onions.
