Ingredients

  • 1.5 cups all-purpose flour
  • 0.75 cup unsalted butter
  • 0.5 cup granulated sugar
  • 1 teaspoon ground cardamom
  • 1 tablespoon lemon zest
  • 3 pieces eggs, large
  • 0.75 cup lemon juice, freshly squeezed
  • 0.5 cup sour cream
  • 0.75 cup granulated sugar (for filling)
  • 2 tablespoons all-purpose flour (for filling)
  • 2 tablespoons powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease or line an 8x8-inch baking pan with parchment paper.

Step 2

In a medium mixing bowl, combine 1.5 cups of flour, 0.75 cups of butter (cold and cubed), 0.5 cups of sugar, and 1 teaspoon of cardamom. Use a pastry cutter or your fingers to mix until you have a crumbly dough.

Step 3

Press the dough evenly into the bottom of the prepared baking pan. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and set aside to cool slightly.

Step 4

In another bowl, whisk together 3 large eggs, 0.75 cups of lemon juice, 0.5 cups of sour cream, 0.75 cups of sugar, and 2 tablespoons of flour until smooth.

Pour the lemon mixture over the partially baked crust and return the pan to the oven. Bake for an additional 15-20 minutes, or until the filling is set and no longer jiggles in the center.

Remove from the oven and cool completely at room temperature before transferring to the refrigerator to chill for at least 2 hours.
