Ingredients

  • 12 lbs Whole turkey
  • 0.5 cups Olive oil
  • 0.5 cups Fresh lemon juice
  • 2 tablespoons Lemon zest
  • 6 cloves Garlic, minced
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 1.5 tablespoons Salt
  • 1 tablespoon Black pepper
  • 1 teaspoon Paprika
  • 2 cups Chicken or turkey stock
  • 0.25 cups Unsalted butter, melted

Directions

Step 1

Start by preparing the marinade. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and paprika.

Step 2

Pat the turkey dry with paper towels and place it on a clean cutting board. Remove any giblets and neck from the cavity, if included, and save them for another use or discard.

Using a marinade injector, carefully fill it with the prepared lemon garlic marinade. Inject the marinade into the thickest parts of the turkey, such as the breasts, thighs, and drumsticks. Be sure to use small amounts in multiple spots for even distribution.
